E.Wedel chocolate flavoured marshmallow in chocolate
The classic marshmallow, known even to the ancient Greek cooks, includes fruit puree, sugar and egg white. All these components are thoroughly whipped and mixed until a homogeneous mass with a large number of air bubbles forms. After this, the mixture is heated and mixed with the gelling component - gelatin, for example, or agar-agar. After cooling, the product is sufficiently dry, soft and crumbly.
